Easy Lemon & Herb Poached Chicken

Start by placing chicken breast in a shallow pan and add cold water, ( you may also use a flavored broth if desired) just enough to cover chicken. For flavor make sure to add 1-1.5 tsp sea salt. After that you can get as creative as you would like with seasoning depending on what flavors you want to create. Lemon and herb is simple and fresh making this chicken easy to pair with just about any dish.

Ingredients

Fresh parsley, fresh thyme, peppercorns, 2 garlic cloves and fresh lemon slices.

Directions

Cover chicken and Set pan to medium heat. You want this to slowly come to a simmer ( don’t rush this step by increasing heat, which can lead to rubbery chicken) Once the liquid has come to a simmer you want to lower the heat and continue cooking on a low simmer for about 10-12 minutes. Cooked chicken temperature is 165 degrees if you want to be sure and use a thermometer to assess doneness.

After chicken is fully cooked remove chicken breast from the pan and place it on a plate or cutting board to rest. Let chicken rest 5 minutes before cutting (this heals seal in juices and keep cooked chicken tender) Cut chicken against the grain for the best texture. You can also easily shred this chicken if you prefer to use it that way. This is a great option for meal prepping and to have a easy lean protein on hand to throw meals together throughout the week.
